First, this book is a vegetarian book and it is not the strict VEGAN one. However, it does have some all VEGAN recipes in it that do not have eggs, regular cheese etc. While other regular vegetarian recipes in this book does allow you to eat eggs and dairy products.My favorite recipes in this book are:
+ Yogurt Parfait - This is so so good and so quick to make!
+ Vegan French Toast - Soymilk replaces regular milk. This is also quick to make and tastes wonderful!
+ Peach Smoothie (Diabetic) - This has bananas and peaches in it and it has no sugar or splenda etc, yet is very sweet!

I love the recipes inside this cookbook. They are easy and quick to prepare, delicious, nutritious and recommended for better health. Plus the photographs with the recipes made them even tastier. What about the people that can't eat eggs. And soy milk I don't know about using in muffins . The muffin recipe sound good and the ingredients is simple,but the soy milk so would pass over. should have been another kind of milk.
